Tasting Notes
In the glass, it shows a pale, luminous colour with the unmistakable clarity of a top Chablis. The nose opens with white flowers, citrus oil, green apple and a finely etched chalky minerality, all presented with precision and lift.
On the palate, the wine is linear and focused, with saline tension, bright structure and a deep, layered finish that lingers with impressive purity. While already seductive, it has the balance and concentration to develop further complexity over the next 10–15 years, gaining depth, nuance and richer mineral expression.
Production
Made from Chardonnay grown in the Grand Cru Blanchot climat in Chablis, the wine reflects a terroir defined by limestone-rich soils and a cooler climate that naturally preserves freshness and tension. The site’s more delicate, chalk-driven character gives the wine its floral elegance and subtle power.
Harvested with care and vinified in the restrained, terroir-focused style associated with Domaine Raveneau, the wine is crafted to highlight precision, texture and purity rather than overt oak or ripeness, resulting in a distinctly classical expression of Chablis.
Food & Serving
This is an excellent match for fine shellfish, lobster, scallops, sashimi, oysters and delicate preparations of white fish such as turbot or sole. It also pairs beautifully with poultry in light cream sauces or subtle dishes featuring spring vegetables. Serve at around 10–12°C, and decanting is generally unnecessary unless the wine is very young and you wish to open it up slightly.
