Domaine Raveneau’s Chablis Grand Cru Blanchot 2012 is a striking example of how great Chardonnay from Chablis can evolve with grace, precision, and depth. Sourced from one of the appellation’s most revered Grand Cru sites, it combines mature complexity with the mineral drive and tension that have made Raveneau a benchmark producer in Burgundy.

Tasting Notes
Now showing beautiful maturity, the wine opens with layered aromas of ripe citrus, white flowers, chalk, and a subtle petroleum nuance. These notes are joined by a distinctive mineral impression that gives the wine both lift and definition. On the palate, it is concentrated and almost silky in texture, balanced by a vivid, precise acidity. The finish is long and saline, with grapefruit, stone, and a distinctly chalky persistence. While it is drinking well now, the wine still has the structure to evolve further over the coming years.

Production
Blanchot is one of Chablis’ Grand Cru vineyards, known for producing refined wines with pronounced minerality and tension. Raveneau’s approach is traditionally meticulous and low-yielding, with careful harvesting to preserve concentration and site expression. The result is a wine shaped by classic Chablis terroir and a vinification style that emphasizes clarity, balance, and age-worthy structure.

Food & Serving
This wine pairs beautifully with shellfish, lobster, turbot, oysters, and delicately prepared white fish, as well as poultry in cream-based sauces or dishes with subtle mushroom notes. Serve slightly chilled, ideally around 10–12°C, and decant briefly if opened young or if you want to encourage the aromatics to unfold. For this 2012 vintage, a short decant can help reveal its full complexity.
