Tasting Notes
In the glass, it shows an inky, almost opaque color with a vivid purple edge. The nose is intensely layered and beautifully complex, unfolding with ripe black plum, blackberry, freshly ground pepper, liquorice, smoked meat, truffle, crème de cassis, violets, and classic Provençal herbs.
The palate is exceptionally concentrated yet impeccably balanced, with dark fruit, spice, and savoury notes carried by remarkable freshness and structure. The finish is extraordinarily long and persistent, and this is a wine with outstanding aging potential—one that will continue to develop beautifully over many years, even decades.
Production
Da Capo is made from a rigorous selection of fruit from three different vineyards, using a blend dominated by Grenache, supported by Syrah, Mourvèdre, and several additional Rhône varieties. The grapes are pressed whole and fermented for around 10 days in cement tanks with no added yeast, reflecting a minimal-intervention approach. The wine then matures for two years in carefully selected old oak barrels before release.
Food & Serving
This is a serious red wine that deserves equally thoughtful food, such as roasted lamb, game, braised short ribs, beef Wellington, or dishes with wild mushrooms and herbs de Provence. Serve at around 16–18°C, and consider decanting for several hours if opened young, especially in magnum format, to allow the wine’s full aromatic complexity to emerge.
