Tasting Notes
In the glass, it shows a deep, dark ruby color with impressive concentration. The nose opens with blackberry, dark plum, black tea, black pepper, and a fragrant lift of fresh rosemary and thyme, gaining further complexity with air as leather and sandalwood emerge. On the palate, it is powerful yet finely structured, combining ripe dark fruit with clove, white pepper, and a savory herbal thread that carries through the finish. This is a wine with serious aging potential, and the 2021 should continue to improve over the next 5 years, while remaining highly rewarding for 20–25 years or more.

Production
Cuvée Réservée is crafted from 13 grape varieties, though it is strongly dominated by around 80% Grenache, with Mourvèdre and Syrah adding structure and spice. Domaine du Pegau follows a traditional approach: whole clusters are pressed, fermentation takes place in cement vats with native yeasts, and the wine is matured for two years in used oak barrels. The result is a wine that balances power with finesse and faithfully expresses the character of Châteauneuf-du-Pape.

Food & Serving
This is an excellent match for rich dishes such as roast lamb, game, beef stew, duck, or slow-cooked Provençal cuisine with herbs and garlic. Serve at around 16–18°C, and decanting for 1–2 hours is recommended, especially in its youth, to allow the wine’s aromatic complexity and structure to fully open.
