Produced only in the very greatest vintages and sourced from some of the estate’s oldest vines, Cuvée da Capo is the turbo-charged sibling of the famed Cuvée Réservée. The 2016 is widely hailed as one of the finest Capos ever made, uniting sheer power, depth and elegance in a wine built for decades of graceful evolution.

Tasting Notes
In the glass, the 2016 Cuvée da Capo is a deep, opaque ruby with a garnet rim hinting at early tertiary complexity to come. The nose is intensely expressive, unfurling layers of black cherry and ripe plum intertwined with dark chocolate, black licorice, garrigue herbs (thyme, rosemary, and lavender), cracked pepper, and a subtle gamey, smoky nuance. Hints of crushed violets and warm stones add further complexity as it opens. On the palate, this is full-bodied and voluptuous, with waves of black fruits—morello cherry, macerated blackberry, and damson plum—wrapped in a velvety, almost seamless texture. Rich notes of cocoa, espresso, and cured meat sit alongside savory spice, leather, and a saline mineral thread that keeps the wine lifted and precise. The tannins are abundant yet incredibly fine-grained, and the finish is strikingly long, echoing dark fruit and spice for what feels like minutes. In this 2016 vintage, the balance between power and finesse is exceptional, and the wine is still at the beginning of its journey. While already magnificent after proper aeration, it has the structure to evolve beautifully through 2040 and beyond, especially in this large-format bottle.

Production
Cuvée da Capo is sourced from some of Domaine du Pégau’s oldest, low-yielding parcels in Châteauneuf-du-Pape, primarily on the famed plateau of La Crau, where old-vine Grenache, Mourvèdre and other permitted varieties grow in the classic mix of galets roulés (large rolled stones), red clay, and sandy subsoils. This warm, sun-drenched terroir, tempered by mistral winds, yields grapes of remarkable concentration and natural balance. Harvesting is done entirely by hand, with rigorous selection in the vineyard and again at the winery to ensure only perfectly ripe, healthy fruit makes it into the blend. True to Pégau’s traditionalist philosophy, the grapes are typically not destemmed, and fermentation takes place in old vats with indigenous yeasts, followed by long maceration to extract color, flavor, and fine tannins. The wine is then aged in large, old oak foudres and casks, which impart texture and complexity without overt oak flavor, before being bottled unfiltered to preserve its depth, character, and aging potential. The 12L Balthazar format further slows development, promising extraordinary longevity.

Food & Serving
This powerful yet refined Châteauneuf-du-Pape is best matched with rich, flavourful dishes that can stand up to its intensity. Think slow-braised lamb shanks with rosemary, herbed rack of lamb, daube de boeuf (Provencal beef stew), venison or wild boar, truffle-infused dishes, or aged hard cheeses like Comté, Parmesan, or mature Gouda. It also shines alongside game birds in sauce, mushroom-based dishes, and hearty Mediterranean fare with olives and Provençal herbs. Serve at 16–18°C (60–64°F); in a 12L Balthazar, allow ample time for the wine to open up—decanting for 3–4 hours (or even longer for younger bottles) is recommended to fully reveal its aromatic complexity and polished texture.
