Tasting Notes
In the glass, it shows a bright, inviting profile with a pale golden hue. The nose opens with ripe pear, lemon zest, white flowers, and a touch of honey, layered with subtle notes of toast and vanilla from the barrel ageing. The palate is silky and generous, with ripe citrus, peach, grapefruit, wet stone minerality, and a delicate hint of fresh butter. A refreshing acidity keeps everything poised and lively, while the creamy texture and gentle spice give the wine depth and charm. It should drink well now and will continue to gain nuance over the next few years.

Production
The Chardonnay fruit comes from south-facing slopes in Burgundy and is harvested entirely by hand to ensure only the ripest grapes are selected. After careful sorting at the winery, the must is fermented in oak barrels at 17–20°C, then aged for 12 months in the same barrels. Weekly bâtonnage during ageing adds richness, texture, and complexity, helping shape the wine’s creamy mouthfeel and layered style.

Food & Serving
This wine is an excellent match for elegant fish dishes, especially steamed cod or other lean white fish served with a creamy white wine sauce and tender summer vegetables. It is best enjoyed slightly chilled, around 10–12°C, and does not usually require decanting.
