Description
Domaine D’O Chardonnay 2023 is a bright, modern expression of southern French Chardonnay from the cool, elevated hills around Limoux in Languedoc. It combines the sun-kissed ripeness of the Mediterranean with a Burgundian sense of finesse and balance. Crafted by winemaker Oliver Lemstra Bake, who grew up among the Grand Crus of Burgundy, this wine offers a refined take on Languedoc Chardonnay that feels both approachable and quietly sophisticated.
Tasting Notes
In the glass, this Chardonnay shows a beautiful light golden hue with luminous clarity, hinting at both freshness and concentration. The nose opens with pure citrus tones, led by mandarin and lemon zest, layered with subtle almond, a touch of vanilla and a delicate mineral edge.
On the palate, the wine is very well-balanced, harmonious and elegant. Juicy citrus fruit is joined by stone-fruit nuances, while the almond and vanilla notes suggest a gentle brush of oak rather than overt wood. A fine, linear minerality runs through the mid-palate into a clean, persistent finish, giving shape and tension to the fruit. Enjoy it now for its vibrancy, or over the next 3–5 years as the texture rounds out and the nutty, creamy elements become more pronounced.
Production
Domaine d’O farms about 12 hectares in AOC Limoux, a cooler, higher-altitude corner of the Languedoc where the combination of limestone-rich soils and a mix of Atlantic and Mediterranean influences naturally suits Chardonnay. The grapes are typically harvested in the cool of the morning to preserve aromatic freshness, then carefully sorted to ensure only the healthiest fruit is used. Vinification focuses on purity and balance: gentle pressing, temperature-controlled fermentation to capture bright citrus and floral notes, and, for at least a portion of the wine, maturation with subtle oak influence to bring in the almond and vanilla tones while maintaining the wine’s characteristic elegance and minerality.
Food & Serving
This is an easy, go-to white that truly ‘goes with everything’—it shines with grilled or baked fish, shellfish, roast chicken, poultry in cream or lemon-based sauces, and a wide range of vegetable dishes from roasted root vegetables to grilled asparagus and zucchini. Its freshness and texture also make it a natural partner for lighter grain-based dishes such as quinoa salads with herbs, citrus and nuts. Serve well-chilled but not icy, ideally around 10–12°C, so the aromatics and texture can fully express themselves. Decanting is not necessary, but opening the bottle 15–20 minutes before serving will help the wine open up in the glass.
Producer
Domaine d’O is the personal project of winemaker Oliver Lemstra Bake, born at the historic Hospices de Beaune and raised among Burgundy’s Grand Crus and the vineyards of Château Canet in Languedoc. Vineyards, grapes and cellars were part of his everyday life from childhood, and he honed his craft further in the cellars of Mendoza, Argentina, before returning to France. With Domaine d’O’s 12 hectares in Limoux, he set out to marry his Burgundian roots with his Languedoc upbringing, focusing on terroir-driven, elegantly balanced wines. This cross-cultural know-how positions Domaine d’O as one of the interesting, quality-focused small estates helping to redefine what Languedoc Chardonnay can be.
