Domaine Didier Dagueneau’s Pouilly-Fumé Silex 2016 is one of the Loire Valley’s most renowned expressions of Sauvignon Blanc. Named after the flint-rich soils of its vineyard sites, Silex is celebrated for its remarkable mineral character, precision and ability to mature gracefully. It also reflects Didier Dagueneau’s influential vision of producing Sauvignon Blanc with the depth, texture and complexity usually associated with fine red wines.
Tasting Notes
The wine has a bright, clear appearance and opens with an intense, refined nose of citrus, ripe grapefruit, gooseberry and white fruit. Beneath the fruit are distinctive aromas of smoky flint, wet stone, fresh herbs and subtle floral nuances, giving the wine both energy and depth.
On the palate, Silex 2016 is exceptionally focused, vibrant and concentrated. Lively acidity frames flavours of lemon, grapefruit and stone fruit, while pronounced saline minerality and a characteristic flinty smokiness add complexity. The texture is layered yet remarkably weightless, leading to a long, persistent finish. This is a serious white wine with considerable ageing potential and should continue to develop beautifully over many years when properly stored.
Production
Silex comes from sought-after Pouilly-Fumé parcels characterised by a high concentration of flint, or silex, in the soil. This distinctive terroir contributes to the wine’s renowned smoky, stony and mineral profile. The fruit is handled with great care and the wine is made in a style that prioritises concentration, balance and textural complexity, allowing the purity of the Sauvignon Blanc and the character of the site to remain at the forefront.
Food & Serving
Serve at approximately 10–12°C. Its combination of freshness, mineral depth and concentration makes it an excellent partner for oysters, grilled or poached fish, shellfish, sushi and seafood with citrus-based sauces. It can also complement goat’s cheese, particularly a mature Crottin de Chavignol, as well as delicate poultry dishes. Young bottles may be enjoyed after a short period of aeration, while a mature bottle is best opened carefully and decanted only if necessary to remove sediment.
