Production
The grapes come from selected parcels in Chassagne-Montrachet, where the combination of limestone-rich soils and the cool climate of southern Burgundy helps produce Chardonnay with both tension and richness. Harvesting is done by hand to ensure only the best fruit is chosen, and the grapes are vinified gently to preserve the authenticity of the terroir. After soft pressing, fermentation takes place under temperature control, followed by aging in French oak barrels, some of which are new, to add structure and complexity without overwhelming the wine’s natural fruit.
Food & Serving
This Chassagne-Montrachet is an excellent match for grilled lobster, roasted turbot with beurre blanc, creamy risottos, or mature cheeses such as Comté and Beaufort. Serve it slightly chilled, ideally around 10-12°C, to allow its aromatic detail and texture to show at their best. Decanting is not essential, but a short aeration can be beneficial if the wine is served young.
