Crafted from low-yield Cabernet Sauvignon and Merlot, it delivers impressive concentration without feeling heavy or overworked. Produced with minimal intervention, it’s a characterful natural-style wine that still feels clean, focused and utterly approachable.

Tasting Notes
In the glass, À l'ouest Bio 2019 shows a deep, vibrant ruby core with a youthful purple rim that hints at its intensity and freshness. The nose is immediately expressive: ripe blackberry and blackcurrant mingle with notes of dark plum, a touch of leather, and subtle herbal and mineral nuances. On the palate, the wine is dense and concentrated yet remains refreshingly dry and agile. Juicy black fruits dominate – especially blackberry – supported by fine-grained tannins and a lively, balanced acidity that keeps everything taut and precise. There’s plenty of power and structure, but no excess weight, with a long, clean finish that carries hints of spice and a faint savory edge. Enjoy it now for its vibrant fruit and energy, or drink within the next 4–6 years to let the tannins soften further and the savory notes deepen.

Production
The grapes for À l'ouest Bio 2019 come from organically farmed vineyards in the Languedoc, where a warm Mediterranean climate, abundant sunshine and well-drained soils allow Cabernet Sauvignon and Merlot to ripen fully while retaining freshness. Yields are deliberately kept very low at just 30–40 hl/ha, concentrating flavor and structure in the berries. All grapes are hand-harvested and strictly sorted in the vineyard to ensure only perfectly healthy, ripe fruit is used. The two varieties are vinified separately, each undergoing a long maceration on the skins (around 3 weeks for one, 5 weeks for the other) before being run off the skins without pressing, which favors finesse over extraction. The wine is made with minimal intervention: no fining, no filtration, and only a very small addition of sulfur just before bottling, preserving the wine’s natural texture, aromatics and sense of place.

Food & Serving
This wine’s ripe black fruit, fine tannins and dry, savory finish make it a versatile partner at the table. It works beautifully with grilled lamb chops, flank steak, or roast beef, as well as hearty dishes like cassoulet, braised short ribs, or a classic beef stew. It also pairs well with charcuterie, aged hard cheeses, and Mediterranean vegetable dishes featuring mushrooms, aubergine or tapenade. Serve at 16–18°C (60–64°F) for optimum balance; a light chill in warmer weather can emphasize freshness. Decant for 30–45 minutes before serving to allow the aromas to open and the tannins to soften slightly.
