Description

Domaine des Amiel À l'ouest 2019 is an organic Languedoc red that brings together Cabernet Sauvignon and Merlot in a ripe, concentrated style. Low yields and careful hand selection give it generous fruit and structure, while gentle handling in the cellar preserves an appealingly fresh, unforced character.

Tasting Notes
Deep in fruit character, it opens with aromas of blackberry and a subtle hint of leather. The palate is dense and concentrated yet never heavy, with juicy dark-fruit flavours, fine tannins and a thoroughly dry, lingering finish.

Production
Yields were kept low at 30–40 hl/ha, and the grapes were carefully sorted during hand harvest. Cabernet Sauvignon and Merlot were vinified separately, each drawn off the skins without pressing after three and five weeks of maceration, respectively. The wine was bottled without fining or filtration and with only a minimal addition of sulphur. Further vineyard or terroir details are not provided.

Food & Serving
Enjoy with grilled or roasted beef, lamb, herb-seasoned sausages or a hearty mushroom dish. Serve slightly cool for a red, around 16–18°C; a brief decant can help open its fruit, though it is not essential.
