Tasting Notes
Robert Parker described the 2005 Lavaux St.-Jacques as showing roasted meatiness, subtle sweet fruit, and salty, savory minerality, alongside toasted nut notes and remarkable intensity. In the glass, it typically presents a deep ruby hue with mature garnet reflections, leading into a complex bouquet of dark cherry, blackberry, spice, earth, and game.
On the palate, the wine is layered and concentrated, yet lifted by freshness and silky tannins. Its signature balance of density and elegance gives it impressive staying power, and while already expressive, it still has the structure to continue evolving gracefully over time.
Production
The wine comes from Lavaux St. Jacques, one of Gevrey-Chambertin’s most respected premier cru vineyards, known for limestone-rich soils and excellent drainage that help produce wines of minerality and finesse. Domaine Denis Mortet has long focused on meticulous vineyard work, including no herbicides or synthetic fertilizers since 1996, reduced ploughing to preserve soil structure, and a strong emphasis on small berries for greater concentration.
Harvesting is carried out with careful selection to ensure healthy fruit, and vinification is aimed at preserving purity, site expression, and the supple texture that defines the domaine’s style. The result is a wine that reflects both the character of the vineyard and the domaine’s commitment to increasingly sustainable viticulture.
Food & Serving
This Premier Cru pairs beautifully with dishes that echo its savory complexity, such as roast duck, pigeon, venison, beef fillet, or mushroom-based dishes like truffle risotto. It also works well with aged cheeses and simply prepared game birds. Serve at around 16–18°C, and decant for about 1–2 hours if drinking now to help the aromas open fully.

Domaine Denis Mortet was established in Gevrey-Chambertin in 1956, beginning with just one hectare under Charles Mortet. Denis Mortet expanded the estate significantly after taking over in 1992, and the domaine has since become one of Burgundy’s benchmark producers, now run by Laurence Mortet and her children, Arnaud and Clémence, since 2006. Known for its dedication to soil health, precision viticulture, and wines that combine classic Burgundian structure with freshness and silkiness, the domaine enjoys a strong reputation both in the region and internationally.
