Tasting Notes
The 2016 Romanée-St-Vivant shows a vivid, luminous ruby color in the glass. Its bouquet is exceptionally complex and expressive, with notes of red berries, cassis, peony, rose petal, and a delicate potpourri character that unfolds beautifully with time.
On the palate, it is full-bodied yet weightless in feel, with tangy acidity, superb concentration, and finely woven, powdery tannins. The finish is long, fragrant, and elegant, reflecting the balance and purity that define the domaine’s best wines. While already impressive in youth, this is a wine with significant aging potential and will continue to evolve gracefully for many years.
Production
The grapes come from Romanée-St-Vivant, a Grand Cru site in Vosne-Romanée, where the soils and exposure help produce Pinot Noir of extraordinary detail, perfume, and refinement. Domaine de la Romanée-Conti farms its vineyards with meticulous care, using organic practices and incorporating biodynamic principles, while keeping yields extremely low through strict selection and precise work in the vines.
Harvesting is done entirely by hand, followed by a second sorting at the winery to ensure only the healthiest fruit is vinified. Fermentation takes place traditionally in old wooden vats without cold maceration, and the wine is then aged for around 16 to 18 months in new oak barrels, with minimal intervention so the terroir can speak clearly.
Food & Serving
This wine is best served with refined dishes that complement, rather than overwhelm, its elegance—think roast duck, quail, pigeon, venison, or lamb with earthy mushroom, truffle, or forest herb accents. It also works beautifully with aged cheeses of subtle character. Serve at around 16–18°C, and decant gently if the wine is young to allow its aromatics to open, though for very old bottles a careful, minimal decant is preferable.
