In the glass, Les Gras Moutons shows a pale straw color with shimmering green highlights, hinting at its youthful freshness and vibrant acidity. The nose is clean and intense: sea breeze and crushed oyster shell meet lemon zest, white grapefruit, green apple, and subtle notes of white flowers and fresh herbs, with a delicate yeasty nuance from the sur‑lie aging.
On the palate, the wine is bone‑dry, zesty, and linear yet surprisingly mouth‑filling, thanks to time on the lees. Les Gras Moutons is sourced from a single, well‑exposed site in the heart of Muscadet Sèvre‑et‑Maine, where Melon de Bourgogne vines root deeply into gneiss and granite soils close to the Atlantic. Domaine de la Pépière farms this parcel organically, with meticulous work in the vineyard and hand‑harvesting to ensure only perfectly ripe, healthy grapes make it to the cellar—still relatively rare in Muscadet, where machine harvesting is common. After gentle pressing, the must is fermented with indigenous yeasts in underground tanks, and the wine is left to rest sur lie for several months, gaining texture and complexity before bottling without excessive fining or filtration, preserving maximum purity and expression of terroir.
