This cuvée captures the finesse and tension of cool-climate Burgundy, while offering a more approachable, youthful charm than many wines from the grands villages. It’s a precise, characterful red that bridges classic Burgundian elegance with a modern, artisanal touch.

Tasting Notes
In the glass, the 2022 Haute-Côtes de Nuits shows a bright, translucent ruby hue with a lively rim, hinting at its freshness and energy. The nose is perfumed and pure, opening with red cherries, wild strawberries and crushed raspberries, followed by subtle floral notes of rose and violets. With a bit of air, more complexity emerges: a gentle spice, a touch of underbrush and a fine, stony minerality. On the palate, the wine is medium-bodied and delicately structured, with silky, finely grained tannins and a keen line of acidity that keeps everything wonderfully lifted. Fresh red fruit is at the core—think cherry, cranberry and pomegranate—layered with hints of white pepper, dried herbs and a faint savory edge. The finish is long and precise, marked by mineral tension and juicy, mouthwatering fruit. While highly enjoyable in its youth for its brightness and charm, this 2022 vintage has the balance to evolve gracefully over the next 5–8 years, gaining a bit more depth, earth and spice with time in bottle.

Production
Perched on the limestone-rich slopes outside Dijon, Domaine de la Cras enjoys a cool, breezy terroir that is ideal for finely etched Pinot Noir. The vineyards are farmed organically, with an emphasis on biodiversity and careful work in the vines to limit yields and enhance concentration. Harvest is typically done by hand, allowing for strict selection of healthy, ripe bunches. In the cellar, the winemaking is deliberately low-intervention: whole clusters are often used to bring aromatic lift and structural finesse, fermentations proceed with indigenous yeasts, and extraction is kept gentle to preserve delicacy. Aging takes place in a combination of neutral and lightly toasted barrels (and sometimes larger vessels), ensuring that oak supports rather than dominates, allowing the purity of fruit and the distinct Haute-Côtes de Nuits character to shine.

Food & Serving
This Pinot Noir is wonderfully versatile at the table, pairing beautifully with roast chicken, pork loin, charcuterie, and lighter game dishes such as quail or rabbit. It also works very well with mushroom-based dishes, herb-roasted vegetables, and semi-soft cheeses like Comté or Tomme. Serve slightly cool, around 14–16°C (57–61°F), to highlight its freshness and aromatic complexity. A short decant of 20–30 minutes can help the wine open up, especially in its first few years, revealing more floral and spicy nuances.
