Production
The grapes for Pinostradamus 2023 come from the limestone and marl slopes around Pupillin in the Arbois appellation, a classic Jura terroir that naturally favors wines of lift and precision. Vines are farmed with great care, following organic principles and low-intervention practices that prioritize soil health and biodiversity. Harvest is carried out by hand, parcel by parcel, to ensure only perfectly ripe and healthy bunches are selected. In the cellar, vinification is deliberately gentle: whole or mostly whole clusters are fermented with indigenous yeasts, with minimal extraction to preserve finesse and aromatic clarity. Aging takes place in neutral vessels—often older barrels or large foudres—allowing the wine to rest on its lees without picking up overt oak, before a light sulfuring at bottling and no unnecessary fining or heavy filtration.
