Domaine de Bichery La Source Brut Nature Bio 2021 is a vibrant, organically farmed Champagne from the rising-star Côte des Bar, crafted with zero dosage for a pure and unadorned expression of terroir. This cuvée brings together Chardonnay, Pinot Noir and Pinot Meunier in a tightly knit, mineral-driven style that’s both serious and irresistibly drinkable. Historically overlooked as “second-class Champagne”, the Côte des Bar is now one of the most exciting corners of the region, and La Source is a perfect introduction to its new generation of grower-producers.
Tasting Notes
In the glass, La Source Brut Nature Bio 2021 shows a pale lemon colour with silvery highlights and a fine, persistent bead of bubbles. The nose is precise and expressive: fresh green apple, lemon zest and white peach mingle with notes of chalk dust, buttered brioche, roasted hazelnut and a hint of white flowers and wet stone.
On the palate, this is dry, tense and beautifully focused, with the energy you expect from Brut Nature but wrapped in a gentle, creamy texture from extended lees aging. Chardonnay brings brightness and citrus, Pinot Noir delivers red-fruited depth and structure, while Pinot Meunier adds a subtle roundness and spice. Flavours of crisp pear, Granny Smith apple, lemon curd and redcurrant are layered over a saline, chalky backbone, leading to a long, mouthwatering finish. Enjoy it now for its verve and precision, or cellar it for 3–7 years as the fruit integrates further and more brioche and nutty nuances emerge.
Production
The fruit for La Source Brut Nature Bio 2021 comes from organically farmed vineyards in the Côte des Bar, rooted in Kimmeridgian limestone soils – the same marine-rich subsoils that define some of France’s greatest terroirs. These rocky, mineral-laden slopes naturally limit yields and give the wines their signature salinity and tension. Grapes are harvested by hand at optimal ripeness, with strict sorting in the vineyard and at the winery to ensure only pristine bunches are used. Vinification typically combines stainless steel and neutral oak for different parcels, allowing both freshness and subtle textural complexity, with spontaneous or carefully managed fermentations. The base wines then undergo secondary fermentation in bottle and rest sur lie for an extended period to build fine mousse and depth. Bottled without dosage (Brut Nature), the final wine is a transparent reflection of site, season and grape, without the sweetening or softening effect of added sugar.
Food & Serving
La Source Brut Nature Bio 2021 is a superb food Champagne, ideal with briny oysters, shrimp and crab, sashimi, ceviche and simply prepared white fish, as well as goat cheese, Comté, tempura vegetables or lightly spiced Asian dishes. Its brisk acidity and chalky grip also make it a refreshing match for fried appetizers, charcuterie and poultry dishes with light cream sauces. Serve well-chilled at around 8–10 °C (46–50 °F); a simple flute works, but a white wine glass will better reveal its aromas and texture. Decanting is not necessary, though opening the bottle 10–15 minutes before serving and letting it sit in the glass will allow the wine to blossom.
