Tasting Notes
In the glass, the 2023 Clos des Godeaux shows a pale lemon to light gold hue with bright, youthful reflections. The nose is layered and savory rather than overtly fruity, with notes of white flowers, toasted hazelnut, subtle smoke, and a fine, chalky minerality. Hints of lemon zest, ripe pear, and fresh brioche emerge with air, giving an impression of depth and precision.
On the palate, this Chardonnay is full and mouthfilling without ever feeling heavy. Clos des Godeaux lies in Savigny-lès-Beaune, in the northern Côte de Beaune, where limestone-rich soils mixed with clay and marl are ideal for finely structured Chardonnay. Domaine d’Ardhuy farms its vineyards biodynamically, focusing on soil health, biodiversity, and low yields to express each parcel’s character. Grapes are typically harvested by hand at optimal ripeness, carefully sorted, and gently pressed. Fermentation takes place in temperature-controlled conditions, often in oak barrels, followed by aging on the lees to build texture and complexity while preserving freshness and terroir-driven minerality. The result is a precise, elegant white Burgundy that speaks clearly of its origin.
Food & Serving
This Savigny-lès-Beaune Blanc pairs beautifully with refined yet flavorful dishes: roasted or poached white fish, seared scallops, poultry in light cream or tarragon sauce, veal blanquette, or mushroom and poultry terrines. It also works wonderfully with creamy cheeses like Comté, Beaufort, or a mild goat’s cheese. Serve at 10–12°C (50–54°F) to highlight its freshness and aromatic complexity.
