Domaine d'Ardhuy Bourgogne Hautes Côtes de Beaune Blanc Les Perrières 2022 is a pure, mineral-driven Chardonnay from the cooler hillsides above the famed Côte de Beaune. This regional Burgundy stands out for its precision and freshness, showcasing the potential of the ‘Hautes Côtes’ in a warming climate. Unusually for white Burgundy, it is crafted without oak, allowing the fruit and terroir to take centre stage while offering a contemporary, ultra-clean expression of Chardonnay.

Tasting Notes
In the glass, Les Perrières 2022 shows a bright, pale straw colour with subtle green reflections, signalling its freshness and youth. The nose is finely etched and understated rather than showy, with notes of green banana, fresh-cut straw, white flowers and a gentle citrus lift, wrapped in a subtle chalky minerality and a hint of white pepper. On the palate, the wine is crisp, linear and focused, with a cool-climate feel. Lively acidity frames flavours of citrus zest, green apple, light stone fruit and delicate herbal tones, all carried on a clean, mineral backbone. The absence of oak keeps the texture sleek and refreshing, finishing with a precise, saline edge that invites another sip. Enjoyable now for its vibrancy, it should develop a little more complexity over the next 3–5 years, gaining roundness while retaining its fresh profile.

Production
Les Perrières comes from parcels in the Bourgogne Hautes Côtes de Beaune, set on higher-altitude, east-facing slopes above the main Côte. Here, cooler temperatures and good ventilation preserve acidity and aromatic nuance, while limestone-rich soils contribute tension and minerality to the wine. Grapes are typically hand-harvested to ensure careful selection and brought to the cellar in optimal condition. After gentle pressing, the must is fermented in temperature-controlled vessels to highlight purity and aromatic finesse. In a deliberate break from classic Côte de Beaune tradition, this cuvée is raised without oak, most likely in stainless steel or inert tanks, preserving its clarity, brightness and unadorned expression of Chardonnay.

Food & Serving
This fresh, unoaked Burgundy is a versatile partner at the table, ideal with oysters, shellfish, simply grilled white fish, sushi, goat cheese, fresh cheeses and light poultry dishes with herbs or citrus. It also works beautifully with vegetable-based dishes such as asparagus, spring salads and lightly creamy risottos where you want lift rather than richness. Serve well-chilled but not icy, around 9–11°C (48–52°F), to allow the aromatics to open while keeping its crisp edge. Decanting is generally not necessary, but opening the bottle 15–20 minutes before serving can help the wine reveal a bit more aromatic nuance.
