Tasting Notes
In the glass, the 2020 Bonnes-Mares shows a deep, concentrated ruby hue, hinting at its intensity and youth. The nose is compact yet complex, opening with a blend of red and black fruits—wild strawberry, raspberry, blackcurrant, and black plum—layered with camphor, violet petals, and subtle earthy-mineral nuances. At this early stage, the aromatic profile is still reserved and coiled, suggesting there is far more to come with time.
On the palate, the wine is medium to full-bodied with sweet, ripe tannins that feel plush yet finely grained, giving a slightly textured, almost kornet (granular) feel through the mid-palate. Flavors of candied blackcurrant, dark cherry, and black plum are wrapped in a firm structural frame, supported by fresh, precise acidity. The finish is long, sapid, and dark-fruited, with a lingering note of spice and mineral-driven tension. Bonnes-Mares is a grand cru vineyard known for its complex mix of clay-limestone and chalky, stony soils, giving wines that are typically more powerful and structured than those from Chambolle-Musigny’s more ethereal sites. Domaine Comte Georges de Vogüé works with old-vine Pinot Noir, harvested by hand at optimal ripeness to preserve both concentration and freshness. After careful sorting, the grapes are traditionally vinified with a focus on gentle extraction—cool maceration, controlled fermentation, and regular but measured punching down or pumping over. The wine is then aged in French oak barrels, a significant proportion new, to add depth, polish the tannins, and allow the terroir’s character to shine rather than be dominated by wood.

This Bonnes-Mares Grand Cru deserves refined, savory dishes that can match its depth and structure: think roast duck with cherry or plum jus, dry-aged côte de boeuf, venison or other game birds, mushroom risotto with truffle, or slow-braised lamb with root vegetables. It pairs equally well with mature, hard cheeses such as Comté or aged Gruyère. Serve at 16–18°C (about 60–64°F) to allow the aromatics to express themselves without emphasizing alcohol or tannin. In its youth, decanting for 1.5–3 hours is recommended to help the nose unfurl and the texture soften; for mature bottles, a gentle, shorter decant just before serving is preferable.
