Domaine Bart’s Marsannay Au Champ Salomon 2022 is a pure, finely etched expression of Pinot Noir from the northern edge of Burgundy’s Côte de Nuits. Sourced from the single vineyard “Au Champ Salomon,” it balances vibrant red fruit with the subtle structure and minerality that Marsannay is increasingly celebrated for. Partial whole-berry maceration during fermentation enhances aromatic lift and texture, delivering a wine that overperforms its appellation and captures the classic Burgundian spirit.

Tasting Notes
In the glass, the 2022 Au Champ Salomon shows a bright, translucent ruby hue, typical of finely made Pinot Noir from cooler Côte de Nuits sites. The nose opens with pure notes of wild raspberries, red cherries, and crushed strawberries, intertwined with hints of violets, rose petal, and a touch of spice and earth. A subtle chalky and stony edge underpins the fruit, signaling its limestone-rich origins. On the palate, this Marsannay is supple and medium-bodied, with juicy red berry flavors, delicate cherry skin tension, and a fine, silky tannin structure. The partial whole-berry maceration brings an appealing floral lift and a sense of freshness, while gentle oak (if used) stays firmly in the background, supporting rather than masking the fruit. The finish is long and precise, carried by lively acidity and a savory, mineral-inflected aftertaste. Enjoyable now for its bright, primary fruit, it should evolve gracefully over the next 5–8 years, gaining further complexity and softness with time in bottle.

Production
Au Champ Salomon lies within the Marsannay appellation at the northern gateway to the Côte de Nuits, on well-drained slopes of limestone and clay with marl, which naturally moderates vigor and concentrates flavor in the Pinot Noir grapes. Domaine Bart harvests by hand to allow careful selection of bunches in the vineyard and on the sorting table. In the cellar, a portion of the grapes is left as whole berries for maceration during fermentation, enhancing aromatic intensity and preserving freshness, while the rest is gently destemmed. Fermentation takes place in temperature-controlled vats, followed by aging in Burgundy barrels (often with a restrained proportion of new oak) to refine tannins and texture without overwhelming the delicate fruit and terroir expression.

Food & Serving
This Marsannay is a versatile food wine that shines with dishes that echo its delicacy and finesse. Classic pairings include roasted chicken with herbs, duck breast, pork tenderloin, and veal, as well as charcuterie, pâtés, and earthy dishes featuring mushrooms or lentils. It also works beautifully with soft to semi-firm cheeses such as Comté, Tomme, or mild goat’s cheese. Serve at 14–16°C (57–61°F) to highlight its aromatic complexity and tension. A light decant of 30 minutes can help open the bouquet in its youth, though it can also be enjoyed directly from the bottle, especially after a bit of time in the glass.
