Divella Spumante Blanc de Blancs Dosaggio Zero Magnum is a characterful Italian sparkling wine crafted entirely from Chardonnay and bottled in an impressive large format – perfect for sharing on special occasions. Made without dosage (no added sugar), it showcases the purest expression of fruit, terroir and time on the lees. As one of the most exciting grower-producers in Lombardy, Alessandra Divella brings a minimalist, Champagne-inspired sensibility to the classic metodo classico tradition of northern Italy.

Tasting Notes
In the glass, this Blanc de Blancs shows a luminous straw-yellow hue with green reflections, animated by a fine, persistent mousse and delicate, pinpoint bubbles. The nose is refined and quietly complex: ripe lemon and green apple meet notes of white flowers, fresh bread dough, chalky mineral tones and a hint of toasted hazelnut, reflecting extended lees aging. On the palate, it is dry and razor-precise, with the Dosaggio Zero style emphasizing tension and clarity. Citrus zest, crisp orchard fruit and subtle stone-fruit notes are framed by a firm, saline backbone and vibrant acidity. The texture is creamy yet tightly wound, with a long, linear finish that leaves impressions of crushed limestone and freshly baked brioche. In Magnum, this cuvée gains extra finesse and aging capacity, evolving over 5–8 years (and potentially longer) toward deeper nutty, honeyed and autolytic complexity while retaining its backbone of freshness.

Production
Sourced from organically farmed Chardonnay vines in Lombardy, Divella’s vineyards sit on calcareous and limestone-rich soils that contribute to the wine’s signature chalky, mineral drive. Grapes are harvested by hand at optimal ripeness for metodo classico, with strict sorting to ensure only the healthiest bunches make it into the press. Fermentations are carried out with indigenous yeasts, often in a mix of stainless steel and neutral barrels to add texture without overt oak influence. The base wines then undergo secondary fermentation in bottle and spend an extended period resting sur lie, developing depth, fine bubbles and complex autolytic character. True to the Dosaggio Zero style, no dosage is added at disgorgement, allowing the terroir and natural acidity to speak clearly.

Food & Serving
This precise, bone-dry sparkling wine is a natural match for briny oysters, crudo, sashimi and simply prepared shellfish, where its saline edge mirrors the sea. It also pairs beautifully with tempura, fritto misto, fresh goat cheese, sushi, light poultry dishes and vegetable-based starters such as asparagus, artichoke or fennel salads. Serve well chilled, around 8–10 °C (46–50 °F), to highlight its tension and aromatic finesse. A brief 10–15 minutes in the glass or an elegant, narrow decanter can help the wine open up, especially from Magnum, revealing greater complexity and creaminess without losing its precision.
