Dievole Chianti Classico Novecento Riserva 2022

Dievole Novecento Chianti Classico Riserva 2022 is an elegant organic red wine from the hills of Castelnuovo Berardenga, crafted from Sangiovese with Canaiolo Nero and Colorino. Rich, structured and distinctly mineral, it reflects both the character of its terroir and Dievole’s winemaking heritage, documented since 1090. The Novecento cuvée celebrates more than nine centuries of the estate’s history.

Tasting Notes
The wine has an intense ruby-red colour with clear garnet highlights. Its bouquet opens with expressive aromas of ripe red berries and cherries, complemented by warming spice and subtle earthy nuances. On the palate, it is full-bodied and balanced, with refreshing acidity, pronounced mineral character and a refined tannic structure. The finish is long, persistent and harmonious, with the fruit and spice notes carrying through.

Production
The grapes are sourced from south- and southwest-facing vineyards in the hills of Castelnuovo Berardenga, where silty clay soils are rich in marl, limestone and stones. The vines are trained using spur pruning transitioning into Guyot, with harvesting beginning in early October. Fermentation takes place in temperature-controlled raw concrete vats for approximately two weeks, preserving the aromatic identity of the grapes. The wine then matures for 17 months in unroasted French oak barrels, followed by at least six months of bottle ageing to further integrate the tannins and develop its depth.

Food & Serving
After decanting, this Chianti Classico Riserva pairs beautifully with roast and grilled red meat, game, pork dishes and mature cheeses. Serve at 16–18°C. Decanting is recommended, particularly when enjoying the wine young, as it helps open the bouquet and soften its structured tannins.
