Tasting Notes
In the glass, this wine presents a deep ruby color with subtle garnet hues at the rim, reflecting its few years of bottle age. On the palate, it is medium to full-bodied yet wonderfully composed, with that signature Kras acidity giving real drive and freshness. Production
Derenda’s vineyards in Kras are rooted in the region’s characteristic limestone and terra rossa soils, which naturally limit yields and concentrate flavor while preserving marked acidity. The area’s cooler nights and constant air movement help the Cabernet ripen slowly, building aromatic intensity without sacrificing balance. Grapes are typically harvested by hand at optimal ripeness to ensure careful selection in the vineyard. In the cellar, the wine is vinified in a classic red-wine style with extended maceration on the skins to extract color, aroma and fine tannin, followed by maturation in barrel and bottle to allow the structure to integrate and the varietal character to fully express itself.

This Cabernet Sauvignon is an excellent partner for grilled or roasted red meats, lamb, game, and hearty dishes like braised short ribs or beef stew. It also works well with aged hard cheeses and dishes featuring herbs such as rosemary, thyme and sage, which echo the wine’s own herbal nuances.
