Tasting Notes
In the glass, The Dirt Worshipper 2012 shows a deep, opaque purple core with a dark ruby rim, signaling both concentration and maturity. The nose is intensely aromatic and savory, with notes of cracked black pepper, black olive tapenade, smoked bacon fat, and charcuterie layered over sweet black raspberry, blackberry compote, violets, and a hint of dried herbs.
On the palate, it is medium to full-bodied with an elegant, seamless texture. The Syrah delivers juicy black and blue fruits, licorice, and a touch of cocoa, while the co-fermented Viognier and Roussanne bring lift, floral nuance, and a subtle, rounded mid-palate. Fine-grained, ripe tannins frame the wine without hard edges, and the acidity keeps everything fresh and focused. With proper cellaring, this 2012 has shown the capacity to age gracefully and, from release, was projected to drink well through roughly 2027; well-stored bottles still reward with tertiary notes of leather, smoked meat, and forest floor.
Production
The Dirt Worshipper 2012 is sourced from Denner’s estate vineyards in Paso Robles, influenced by the cooling Templeton Gap breezes and planted on calcareous, rocky soils that naturally limit yields and intensify flavor. The blend is composed of 95% Syrah, 3% Viognier, and 2% Roussanne, evoking the traditional co-fermentation practices of France’s Northern Rhône. Grapes are harvested by hand at optimal ripeness, and the wine was fermented with 50% whole clusters to enhance aromatic complexity, spice, and structure. Following fermentation, it was aged for 20 months in French oak, of which about 15% was new, bringing subtle notes of toast and sweet spice without overpowering the purity of the fruit.
Food & Serving
This is a superb food wine for richly flavored, savory dishes. Think grilled or smoked lamb, slow-braised short ribs, duck confit, venison, or charred vegetables with herbs, olives, and garlic. It also pairs beautifully with Tuscan-style bean stews, mushroom ragù over polenta, or aged hard cheeses like Comté and Manchego. Serve at 16–18°C (about 60–64°F) for best balance and complexity. Decanting for 60–90 minutes helps the wine fully open up, especially if enjoyed on the younger side of its drinking window or straight from a cool cellar.
