Grapes are typically harvested by hand at slightly lower potential alcohol to retain tension and aromatic delicacy. After gentle pressing, the base wines are vinified at cool temperatures in stainless steel to preserve purity of fruit, followed by the traditional method (méthode traditionnelle) second fermentation in bottle. The wine rests on its lees for several months to build texture and fine bubbles before riddling, disgorgement, and a carefully judged dosage to keep the style dry, vibrant, and food-friendly.
