Description

Dalle Ore Riesling 852Hz Bio 2016 is an idiosyncratic, thought‑provoking white from the hills of Veneto, far from Riesling’s classic heartlands. Named after a specific sound frequency tied to the estate’s ideas about bio‑resonance and “quantum agriculture,” it’s a wine that combines experimental philosophy with traditional, low‑intervention craftsmanship. Riesling is a rarity in this corner of Italy, and here it takes on a distinctly volcanic, Mediterranean character that sets it apart from its German and Austrian cousins.

Tasting Notes
In the glass, the 2016 shows a deep straw to light golden hue, reflecting both its age and its natural, minimally handled upbringing. The wine may present with a slight haze, a hallmark of its unfiltered style. On the nose, expect a complex, evolving bouquet: ripe citrus and preserved lemon, yellow orchard fruit, and baked quince layered with herbal notes, wet stone, subtle smoky hints and a gentle beeswax or lanolin nuance that comes with bottle age. The palate is vibrant yet textural, with Riesling’s natural acidity framed by the richness of a warm Veneto vintage and clay‑rich volcanic soils. Citrus and stone fruits are joined by savory, almost saline mineral tones and a lightly spicy, earthy undertow. The finish is long, dry and slightly phenolic, giving it grip and gastronomic appeal rather than simple fruitiness. At this stage, the 2016 is entering a beautiful mature phase, with tertiary notes beginning to show; it is drinking very well now but, properly stored, still has a few years of positive evolution ahead for those who enjoy more developed Riesling character.

Production
Dalle Ore’s Riesling vines sit around 300 meters above sea level in the Veneto, rooted in fertile, volcanically influenced soils with a high proportion of clay. This terroir gives both ripeness and a pronounced mineral backbone, while the altitude helps preserve acidity. The estate works in a largely natural, progressive way, in line with their broader ideas of bio‑resonance and holistic agriculture: vineyards are farmed organically with minimal external inputs, and the goal is to let the site and the season speak clearly. Harvest is typically done by hand to ensure careful selection of healthy, optimally ripe grapes. In the cellar, the wine is vinified with as little manipulation as possible—native yeasts, minimal intervention, and no additions or subtractions beyond a stabilizing touch where needed—resulting in an authentic expression of Riesling grown on Veneto’s volcanic slopes.

Food & Serving
This distinctive Riesling is a natural partner for refined, savory dishes that can match its texture and minerality. Think freshwater fish, shellfish, and simply prepared crustaceans, vegetable‑driven plates with fennel, leeks or asparagus, or richer poultry dishes with herbs and citrus. It also complements aged mountain cheeses and charcuterie where its acidity can cut through fat. Serve at about 10–12°C to balance freshness with aromatic complexity. A brief decant of 20–30 minutes can help release its more subtle, evolved notes and allow any initial reduction to blow off, especially given its natural, low‑intervention style.

Producer
Dalle Ore Soc. Agricola is a small, quality‑driven estate in Veneto that has been cultivating Riesling since the early 20th century—long before it became fashionable to experiment with non‑native varieties. Over generations, the family has learned how this German grape behaves on their volcanic, clay‑rich slopes, carving out a niche for themselves as one of the region’s more unconventional and progressive producers. Today, Dalle Ore is known locally for its commitment to natural, minimally manipulated wines and for exploring ideas such as bio‑resonance and “quantum agriculture” without losing sight of craftsmanship in the vineyard and cellar. Their Riesling 852Hz Bio stands as a testament to the estate’s willingness to challenge convention and to show a very different, distinctly Venetian face of Riesling.
