Tasting Notes
In the glass, the 2017 Corte Pavone Brunello di Montalcino shows a deep garnet core with brick-red highlights toward the rim, hinting at its development and concentration. The nose opens with vivid aromas of ripe red cherries, wild strawberry and plum, unfolding into layers of dried rose petals, blood orange peel, sweet tobacco, cedar, and a subtle balsamic lift. Underneath, notes of leather, baking spice, and a touch of underbrush speak clearly of its Tuscan origins.
On the palate, this Brunello is medium to full-bodied with finely knit tannins and a fresh, vertical acidity that keeps everything focused. Flavors of sour cherry, macerated raspberry and dried fig are interwoven with savory tones of herbs, licorice, cocoa and a hint of iron-like minerality. The 2017 vintage brings generous fruit framed by a firm but polished structure, leading to a long, persistent finish with lingering notes of spice and dried flowers. Production
Corte Pavone sits on the western slopes of Montalcino, where breezy exposures, significant diurnal temperature swings and stony, marl- and limestone-rich soils give Sangiovese its aromatic lift and finely etched tannins. Farmed according to strict organic and biodynamic principles, the vines are cared for with minimal intervention, and yields are kept low to concentrate flavor and natural balance. The grapes are harvested by hand in small crates, with careful selection in the vineyard and again in the cellar to ensure only perfectly ripe, healthy bunches are used. Fermentation typically takes place in stainless steel or wooden vats with indigenous yeasts, followed by a long maceration to gently extract color, tannin and aroma. The Brunello then matures in large Slavonian oak casks and a selection of smaller barrels for several years, allowing the wine to integrate, refine its structure and develop its signature complexity before bottling and further bottle aging.
Food & Serving
This Brunello pairs beautifully with classic Tuscan and hearty Italian dishes: think bistecca alla fiorentina, slow-braised beef or lamb shanks, wild boar ragù, aged pecorino, mushroom risotto, and truffle-infused pastas. It also complements roast game birds, venison and richly flavored stews. Serve at 16–18°C (60–64°F) in large Bordeaux or Burgundy-style glasses to allow the aromatics to fully express themselves. Decanting for 1–2 hours before serving is recommended, especially in its youth, to soften the tannins and open up the nuanced layers of fruit, spice and earth.
