Tasting Notes
In the glass, Corsignano Chianti Classico DOCG 2019 shows a bright, medium ruby core with garnet reflections forming on the rim – a typical hue for well-made Sangiovese. Swirled, it clings delicately to the sides of the glass, hinting at both freshness and concentration.
The nose is inviting and layered, with vivid aromas of ripe red cherries, wild strawberries and crushed raspberries, followed by notes of dried flowers, violet, and a gentle touch of Tuscan herbs. Subtle hints of sweet spice, cedar, and a faint earthy, terracotta-like minerality emerge with air, adding complexity.
On the palate, this is a medium-bodied, classically styled Chianti Classico: juicy cherry and redcurrant fruit are framed by lively acidity and fine, chalky tannins. Flavours of sour cherry, plum skin, dried oregano and a whisper of leather and tobacco develop across the mid-palate, leading into a long, savoury finish with a pleasant, slightly saline edge. The balance between fruit, acidity and structure makes it both food-friendly and satisfying on its own.
The 2019 vintage offers immediate drinkability, but the wine has the backbone to age gracefully. Over the next 5–8 years, you can expect the fresh red fruit to evolve towards more dried and tertiary notes – leather, forest floor, spice – while the tannins become even more silky and the overall profile more harmonious.
Production
Corsignano’s vineyards lie in the Chianti Classico zone near Siena, where Sangiovese thrives in a mix of clay-limestone and stony, well-drained soils under a warm Tuscan climate moderated by altitude and cooling breezes. Certified organic since 2014 and run as a fully CO₂-free, solar-powered estate, the farm is managed as a holistic ecosystem, with vines, olive trees and kitchen gardens all working in synergy. Grapes are harvested by hand at optimal ripeness to preserve Sangiovese’s natural acidity and aromatic finesse, then carefully sorted before fermentation. In the cellar, traditional Chianti Classico methods are combined with modern precision: fermentation typically takes place in temperature-controlled vats to capture pure fruit, followed by maturation in neutral or lightly toasted oak (often large casks) to refine tannins without overpowering the wine’s delicate floral and herbal character. The result is a transparent expression of terroir and grape, with no excess oak or manipulation.
Food & Serving
This Chianti Classico is a natural partner for Italian cuisine and savoury, Mediterranean-inspired dishes. Think classic pairings such as tomato-based pasta (ragù alla bolognese, pappardelle al cinghiale), margherita or prosciutto pizza, grilled lamb chops, roasted chicken with rosemary, Tuscan bean stews, charcuterie, and aged hard cheeses like Pecorino Toscano or Parmigiano Reggiano. Serve at 16–18°C; slightly cooler for lighter dishes and on warmer days, a touch warmer for richer meats and cheeses. Decanting for 30–45 minutes helps the 2019 vintage open up its floral and spicy nuances, but if you pour it into generous glasses and give it a swirl, it will already show beautifully.
