Tasting Notes
In the glass, this rum shows a deep amber to mahogany hue, with ruby glints that betray its long Port cask finishing. The viscous legs hint at its generous 62.4% ABV and long maturation. On the nose, expect evocative notes of dark sugar and molasses interlaced with ripe red berries, dried cherries and plums, followed by hints of cocoa, toasted oak, licorice and a touch of baking spice.
The palate is full-bodied and intense, with the sweetness of Demerara sugar cane beautifully framed by the red-fruit character from the Port cask. Flavors of blackcurrant, raspberry compote and stewed red plums mingle with toffee, dark chocolate, tobacco leaf and a subtle nutty edge. The high proof carries the flavors with impressive precision—adding a few drops of water reveals further layers of spice, dried fruit and wood polish. The finish is very long, warming and slightly tannic, with lingering notes of port-soaked fruit and dark caramel. Properly stored, this cask-strength rum has excellent aging potential in the bottle, evolving greater harmony and complexity over many years.
Production
This rum hails from Guyana’s famed Demerara region, where rich alluvial soils along the Demerara River and a humid tropical climate yield intensely flavored sugarcane destined for robust, characterful rums. Traditional molasses-based distillation and long maturation in oak form the backbone of this spirit before it is selected by independent bottler Compagnie des Indes for further refinement. After an already extended maturation to 14 years, the rum spends its final 48 months resting in a Port wine cask, allowing the oak to gently infuse red-fruit tones and additional sweetness into the naturally dark, molasses-driven profile. Bottled at a formidable 62.4% ABV and in very limited quantities, it preserves the full personality of both the Demerara origin and the Port cask influence.
Food & Serving
This is a contemplative sipping rum, best enjoyed neat or with a splash of water in a wide tulip or copita-style glass. Serve slightly below room temperature, around 18–20°C (64–68°F), to keep the alcohol in balance while allowing the aromatics to unfold. A brief aeration in the glass is usually sufficient, though you may pour it 10–15 minutes before serving to let it open up. In terms of food pairings, it shines alongside dark chocolate desserts, chocolate fondants, fruit tarts with berries or plums, and mature hard cheeses such as aged Gouda or Comté. It also pairs beautifully with roasted nuts, almond biscotti, and quality cigars, making it ideal for an after-dinner moment.
