Tasting Notes
In the glass, Camino del Pilar Crianza Biológica 2021 presents a luminous straw to pale gold hue, with subtle green highlights that speak to its freshness. Production
Sourced from high-altitude vineyards in the Vinos de Madrid area, Camino del Pilar Crianza Biológica 2021 reflects the granitic and sandy soils that define much of this rugged, continental landscape. These well-drained, poor soils naturally limit yields and concentrate flavor, while cooler night-time temperatures at elevation help preserve acidity and aromatic lift. Grapes are typically harvested by hand to ensure careful selection of only healthy, optimally ripe bunches. After a gentle pressing, the must undergoes fermentation and then matures under a protective layer of flor yeast—known as crianza biológica—allowing for slow, controlled evolution with minimal oxidation. This process yields a wine that is both sharp and complex, with minimal intervention in the cellar to allow the terroir and biological aging to take center stage.

Food & Serving
This distinctive white is an excellent match for dishes that echo its saline, umami-driven character. Think raw and marinated seafood (ceviche, oysters, scallops), grilled or baked white fish, salted anchovies, or classic Spanish tapas such as boquerones, jamón ibérico, olives and almonds. It also pairs beautifully with hard and semi-hard cheeses, particularly Manchego and other aged sheep’s milk cheeses. Serve well-chilled but not icy, ideally around 9–11 °C (48–52 °F). A brief decant of 15–20 minutes in a small carafe or simply giving it time to open in the glass will help the more complex, yeasty and nutty aromas fully unfurl.
