Yields are typically kept low to enhance concentration, and the grapes are harvested by hand at optimal ripeness, allowing careful selection in the vineyard. After destemming and gentle crushing, a long, temperature‑controlled maceration extracts color, tannin, and flavor from the skins, followed by fermentation in stainless steel or concrete. The wine then undergoes extended aging in oak (often a mix of large casks and/or barriques) to refine the robust tannic structure, before additional bottle aging to integrate its components and bring the powerful Sagrantino character into balance.
