Inspired by Collet’s long-standing connection to the Champagne region, it offers a polished, modern profile with a classic sense of place.

Tasting Notes
Pale golden in the glass with a fine, persistent mousse, this Extra Brut shows a clean and vibrant appearance. The nose is delicate yet expressive, with notes of white flowers, citrus zest, green apple, and subtle brioche, supported by a mineral edge. On the palate, it is crisp and linear, with lively acidity, a dry finish, and layered flavors of lemon, pear, and toasted almond. The Extra Brut dosage keeps the wine taut and focused, while the blend lends enough depth and texture to make it both graceful and satisfying. It has the structure to develop further over the next few years, though it is already highly enjoyable now.

Production
Sourced from Champagne vineyards across the appellation, the blend brings together the freshness of Chardonnay, the fruit character of Pinot Meunier, and the structure of Pinot Noir. The wines are typically vinified separately before blending, allowing the producer to shape a precise and balanced cuvée that reflects both the terroir and the house style. The Extra Brut dosage highlights the purity of the base wine and the chalk-driven character associated with the region.

Food & Serving
This Champagne is an excellent match for oysters, sashimi, shellfish, light seafood dishes, and delicate poultry preparations. It also works beautifully with hard cheeses or simply as an apéritif. Serve well chilled, ideally around 8–10°C, and decanting is not recommended.
