Cocchi Alta Langa Bianc ’D Bianc Brut 2019 is a refined traditional-method sparkling wine that showcases Chardonnay at its most precise and expressive. One of the first pure Chardonnay cuvées in Alta Langa, it combines Piemonte’s altitude, limestone soils, and Cocchi’s meticulous craftsmanship in a wine of real elegance and depth.

Tasting Notes
Pale straw yellow in the glass, it is lifted by a fine, persistent mousse that speaks to its long ageing on the lees. The nose opens with white-fleshed fruit, apricot, and a subtle creamy nuance, while the palate is full, silky, and layered, with a delicate hint of white chocolate and a clean mineral finish. Thanks to its low dosage and extended time on the lees, the wine shows excellent balance between freshness, texture, and complexity. It has the structure and vitality to age gracefully for several more years, gaining even more depth and nuance over time.

Production
The vineyards are located in the hills of Alta Langa in Piemonte, where high-altitude sites and white marl-limestone soils give the wine its structure, minerality, and ageing potential. Grapes are harvested by hand, and only the free-run must is selected before fermentation in stainless steel to preserve purity and finesse. The wine then undergoes traditional-method sparkling production, followed by five years of lees ageing, which builds richness, complexity, and volume. Manual riddling and disgorgement à la glace ensure clarity and precision in the finished wine.

Food & Serving
This is an excellent choice with seafood tartare, shellfish, raw fish dishes, and refined starters where freshness and texture matter. It also pairs well with light creamy appetisers and delicate white meats. Serve chilled, ideally around 6-8°C, and decanting is not necessary.
