Tasting Notes
In the glass, the 2012 Combe des Fous is deep ruby with a dark, almost opaque core and a subtle garnet rim beginning to form with age. The nose is intense and seductive, offering layers of blackcurrant, black raspberry and dark cherry, wrapped in notes of dark chocolate, crushed violets, garrigue herbs, and exotic sweet spices.
On the palate, it is full-bodied, plush and concentrated, yet beautifully balanced by freshness and fine, silky tannins. Flavors of ripe black fruits, cocoa, licorice and warm spices unfold gradually, joined by hints of dried flowers and a savory, mineral edge. The finish is long, velvety and seamless, showing both power and elegance. Already approachable and drinking beautifully now, this 2012 has the structure and balance to continue evolving gracefully for at least another 10–15 years from vintage in good cellaring conditions.
Production
Combe des Fous hails from some of Clos St. Jean’s prime parcels in Châteauneuf-du-Pape, where old vines sink deep into a classic mix of rolled galets (large river stones), sand, and clay over limestone subsoils. The Mediterranean climate, marked by abundant sunshine and the cooling Mistral wind, allows Grenache and its companions to ripen fully while preserving freshness. The blend is approximately 60% Grenache, 20% Syrah and the balance Muscardin, Vaccarese and Cinsault, often from low-yielding, old vines picked by hand at optimal ripeness. Vinification typically emphasizes gentle extraction to preserve purity and finesse, with Grenache often matured in larger, neutral vessels and Syrah and other varieties seeing time in small oak barrels. The result is a wine that captures both the richness of the terroir and an unmistakable sense of precision and polish.
Food & Serving
This is a superb wine for rich, savory dishes such as herb-crusted lamb, slow-braised beef cheeks, duck with cherry or fig, game birds, or hearty stews with root vegetables and Provençal herbs. It also pairs beautifully with aged hard cheeses like Comté or Manchego and mushroom-based dishes that echo its earthy complexity. Serve at 16–18°C (60–64°F) in generous red wine glasses. Decanting for 1–2 hours before serving will help the wine open up, smoothing the tannins and allowing its layered aromatics to fully express themselves.
