Tasting Notes
In the glass, the St. Laurent Ancestral Bio 2022 typically appears pale and slightly hazy, with a fine, lively mousse – think somewhere between a blanc de noirs and a very light rosé, depending on the vintage’s extraction. The nose is inviting and pure, showing red berry notes like wild strawberry and redcurrant alongside crunchy orchard fruit, citrus zest, and subtle herbal and floral tones. A faint touch of brioche or yeast from the bottle fermentation may add complexity without feeling heavy.
On the palate, it is dry, bright, and refreshingly juicy, with a crisp acidity that keeps the wine linear and drinkable. Expect flavours of red berries, crabapple, blood orange, and a delicate, saline mineral edge that speaks of Burgenland’s soils. Production
The grapes for St. Laurent Ancestral Bio 2022 are sourced from organically and biodynamically farmed vineyards in Burgenland, where warm Pannonian influences meet the moderating effect of nearby lakes and cool nights. The terroir typically combines loam, gravel, and limestone, giving both ripeness and a distinct mineral backbone. Harvest is done by hand to ensure healthy, perfectly ripe bunches, with careful selection in the vineyard. In keeping with the ancestral method, the juice begins fermenting spontaneously with native yeasts in the cellar and is bottled before fermentation is complete, allowing the bubbles to form naturally in the bottle without added sugar or cultured yeast. Minimal intervention, low or no filtration, and very little added sulphur (if any) keep the wine honest to its origins and full of life.
Food & Serving
This pét-nat style sparkling is wonderfully versatile at the table. It pairs beautifully with charcuterie, pâtés, and lighter cured meats, as well as soft cheeses, fried or grilled white fish, sushi, vegetable tempura, and lightly spiced Asian dishes. Its fresh acidity and subtle grip also make it a great companion to roast chicken, salads with goat cheese or beetroot, and simple tapas. Serve well-chilled, around 8–10°C, to highlight its vibrancy and precision. A very brief, gentle opening in the glass is usually enough; decanting is generally not necessary, though you may choose to pour carefully to leave any natural sediment at the bottom of the bottle.
