Crafted in Champagne by the modern, highly regarded Clandestin project, it combines fine bubbles with a sleek, uncompromising style that speaks to both purity and elegance.
Tasting Notes
In the glass, it shows a straw-golden hue with subtle golden reflections and a delicate, persistent mousse. The nose opens with floral and orchard-fruit aromas, lifted by inviting notes of fresh pastry and a light chalky nuance.
On the palate, this Brut Nature is crisp, fresh, and mineral, with a clean, linear profile and excellent tension. The absence of dosage keeps the finish focused and dry, making it especially appealing for lovers of precise, terroir-driven Champagne. While already expressive now, its structure suggests it can develop additional complexity over time.
Production
Produced in Champagne from Chardonnay, this wine follows the traditional method, with fermentation and second fermentation in bottle to build finesse and complexity. The style reflects the region’s chalk-driven terroir and a careful, low-intervention approach that aims to preserve freshness, purity, and a strong sense of place.
Food & Serving
Best served well chilled at around 8–10°C, this Champagne is a natural match for oysters, sashimi, ceviche, grilled shellfish, or delicate white fish. It also pairs beautifully with aged Comté or other hard, nutty cheeses. Decanting is not recommended; simply open and serve to enjoy the wine’s vibrant mousse and fine detail.

Clandestin Champagne is a collaborative project between Bertrand Gautherot of Vouette & Sorbée and his talented right hand, Benoit Doussot. Though relatively new, the estate has quickly gained attention for producing expressive, terroir-focused Champagnes that blend craftsmanship, precision, and energy, helping to establish its growing reputation in the region.
