Tasting Notes
In the glass, the 1994 Christoffel Berres Riesling Auslese shows a deep golden hue, a clear sign of its age and concentration. The color has evolved from pale lemon in youth to a rich, burnished gold, suggesting honeyed complexity and fully developed aromatics. On the nose, expect a layered bouquet of dried apricot, candied citrus peel, baked apple and acacia honey, intertwined with classic mature Riesling notes of petrol, beeswax and chamomile. Subtle nuances of slate, wet stone and a hint of smoke reveal its Mosel origins. The palate is silky and expansive, with luscious flavors of preserved lemon, quince paste, ripe peach and honeycomb, framed by lively, integrated acidity that keeps the sweetness precise and refreshing rather than cloying. With three decades of evolution, the texture is creamy yet still vibrant, the finish long, mineral and gently spicy. While this wine is fully ready to drink and in a beautiful mature phase, top examples of aged Auslese can continue to hold and develop for several more years if stored carefully.

Production
Grown on the steep, terraced slopes of the Mosel, this Riesling benefits from the region’s quintessential terroir: heat-retaining slate soils, dramatic inclines that maximize sun exposure, and the moderating influence of the river itself. Grapes for Auslese are traditionally hand-harvested in multiple passes through the vineyard (selective picking), allowing the estate to collect only the ripest, healthiest bunches and berries, often with a touch of noble rot (botrytis) to further concentrate flavor and sweetness. In the cellar, the must is gently pressed and fermented slowly at cool temperatures to preserve aromatics and acidity, typically in stainless steel or large traditional German oak casks. Fermentation is stopped with natural residual sugar remaining, resulting in a wine that balances generous sweetness with the crystalline acidity that defines fine Mosel Riesling, followed by extended bottle aging to develop its signature complexity.

Food & Serving
This mature Auslese is superb with rich, savory dishes as well as refined desserts. Pair it with blue cheeses such as Roquefort or Stilton, foie gras, pâté en croûte or roasted poultry with fruit-based sauces (apricot, orange or apple). It also works beautifully alongside mildly spicy Asian cuisine—think duck with hoisin, lemongrass-infused dishes or gently spiced Thai curries—as the sweetness and acidity soothe the heat. For dessert, serve with tarte Tatin, citrus tart or almond cakes, but avoid overly sugary dishes that might overpower the wine. Serve lightly chilled at about 10–12°C (50–54°F) to allow the aromatics to fully express themselves. Decanting is usually not necessary, but gently pouring into a carafe 15–20 minutes before serving can help the wine open up and separate it from any sediment formed during aging.
