Cheval Blanc lies on the Saint-Émilion plateau, at the boundary with Pomerol, on a unique mosaic of gravel, clay, and sandy soils that particularly favor Cabernet Franc alongside Merlot. The estate practices meticulous vineyard management with low yields, detailed canopy work, and careful parcel selection, ensuring that each plot is harvested at optimal ripeness, typically by hand in multiple passes. In the cellar, individual parcels are vinified separately to preserve their identity, with gentle extraction to emphasize finesse over power. The wine is then matured in carefully selected French oak barrels, a portion of which is new, allowing the wood to frame rather than dominate the purity of fruit and floral character that define the 2021 vintage.
