In a cooler, classic-style vintage, this biodynamic Fifth Growth has delivered a wine of purity, precision, and remarkable tension. It stands out for its combination of depth and freshness, bridging traditional Pauillac structure with a modern, terroir-driven sensibility rooted in centuries of history dating back to the 18th century.

Tasting Notes
In the glass, the 2021 Pontet-Canet shows a deep, vibrant ruby-purple hue with a luminous edge, hinting at both concentration and freshness. The nose opens slowly and elegantly, revealing layers of blackcurrant and black cherry, graphite, and crushed violets, intertwined with cedar, tobacco leaf, and a touch of pencil shavings—a textbook Pauillac profile, but lifted by a discreet floral perfume and a cool, mineral undertone. On the palate, this vintage is all about refinement and precision rather than sheer power. Cabernet Sauvignon leads with focused blackcurrant fruit, complemented by the supple plum and red berry character of Merlot and the spice and structure from Cabernet Franc and Petit Verdot. The tannins are fine-grained and chalky, giving a firm yet elegant frame, while the acidity provides a mouthwatering line of freshness that carries through to a long, saline-tinged finish with notes of berries, graphite, and subtle cocoa. While approachable after some aeration in its youth, this 2021 has the structure and balance to evolve beautifully over 15–25 years, gaining complexity, tertiary notes, and additional silkiness with time in bottle.

Production
Château Pontet-Canet’s vineyards lie on the deep gravel mounds of Pauillac, interspersed with clay and limestone that help regulate water and temperature—ideal conditions for Cabernet Sauvignon to ripen fully while retaining elegance. The estate is a pioneer of biodynamic viticulture in the Médoc, relying on meticulous, hands-on vineyard work, horse-ploughing, and natural preparations to nurture vine health and terroir expression. Harvesting is conducted by hand, with strict sorting to ensure only the healthiest, perfectly ripe berries make it into the winery. Vinification combines tradition and innovation: fermentation takes place in a mix of concrete and wooden vats with careful extraction to preserve finesse, followed by aging in a thoughtfully judged proportion of French oak barrels and amphorae. This approach allows the natural character of the fruit and the Pauillac terroir to shine, without being dominated by oak.

Food & Serving
This Pauillac is a natural partner for refined, savory dishes—think roast lamb with herbs, dry-aged ribeye, venison with juniper, or classic dishes like beef Wellington. It also pairs beautifully with duck breast, mushroom-based dishes, and hard or semi-hard cheeses such as Comté, aged Gouda, and Manchego. Serve at 16–18°C (about 60–64°F) to highlight its aromatic complexity and structural elegance. In its youth, decanting for 1.5–2 hours is recommended to allow the bouquet to open and the tannins to soften; as it matures, a gentle 30–45 minute decant to remove sediment and awaken the wine will be sufficient.

Château Pontet-Canet, classified as a Fifth Growth in the 1855 Classification, has long punched above its official rank and is now considered one of Pauillac’s reference estates. Founded in the 18th century and named after Jean-François de Pontet, the property has undergone a remarkable qualitative renaissance under the stewardship of the Tesseron family. Over the past decades, Pontet-Canet has become a leader in organic and biodynamic viticulture in Bordeaux, often cited as a benchmark for sustainable, terroir-driven grand cru classé wines. Its commitment to low-intervention farming, precision in the cellar, and consistent excellence across vintages has earned it a reputation that rivals many higher-classified neighbors in the Médoc.
