Tasting Notes
In the glass, Aromes de Pavie 2021 shows a deep, vibrant ruby to garnet hue with a youthful, glossy rim. The nose is expressive and layered, offering ripe black cherry, plum and blackberry coulis, intertwined with notes of violet, graphite, cocoa, espresso and a subtle touch of sweet spice and fine cedar from oak aging. On the palate, the wine is medium to full-bodied, polished and supple, driven primarily by Merlot’s plush dark fruit while Cabernet Franc adds floral lift and freshness, and Cabernet Sauvignon brings structure and backbone. Expect a generous core of ripe red and black berries, hints of licorice and dark chocolate, and a mineral edge that speaks to its limestone-rich soils. The tannins are fine-grained and velvety, already approachable but with enough grip to support several years of cellaring. Sourced from the exceptional limestone and clay-limestone slopes of Saint-Émilion, Aromes de Pavie 2021 reflects the same privileged terroir as Château Pavie, albeit from parcels and selections destined for a more forward style. The vines benefit from excellent drainage, south-facing exposures and a temperate maritime climate, allowing Merlot, Cabernet Franc and Cabernet Sauvignon to reach optimal ripeness while preserving freshness. Grapes are typically harvested by hand in small crates, with meticulous sorting in the vineyard and at the winery to ensure only pristine fruit is used. Vinification takes place in temperature-controlled vats, with gentle extraction to highlight fruit purity and elegance rather than sheer power. The wine is then aged in French oak barrels—often a mix of new and one-wine barrels—for a period that allows it to gain texture, complexity and aromatic refinement, while keeping the tannins accessible and the oak beautifully integrated.
