Built on a Merlot-led blend with Cabernet Franc and Cabernet Sauvignon, it is celebrated for its depth, structure, and remarkable concentration, with the 2009 harvest now regarded as one of the estate’s standout years.

Tasting Notes
In the glass, it shows a deep, nearly opaque color that hints at its richness and intensity. The nose is layered and expressive, offering dark berries, blackcurrant, plum, and warm spice, with additional notes of mocha, tobacco, and graphite emerging as it opens. The palate is full-bodied and densely packed, yet impressively polished, with silky tannins, ripe fruit, and a long, persistent finish. The warmth of the 2009 vintage brings generous ripeness and balance, while the wine’s structure suggests excellent aging potential for many more years.

Production
Château Pavie is rooted in one of Saint-Émilion’s most prestigious hillside sites, where limestone and clay soils help shape the wine’s power, freshness, and mineral backbone. The 2009 vintage benefited from a warm growing season with ideal ripening conditions, allowing the grapes to be harvested at excellent maturity and blended into a wine led by Merlot, complemented by Cabernet Franc and Cabernet Sauvignon. Aged in new French oak barrels, it gained additional layers of complexity, texture, and depth during élevage.

Food & Serving
This is a natural match for richly flavored dishes such as roast lamb, beef tenderloin, duck breast, truffle-infused dishes, and game. It also works beautifully with aged hard cheeses. Serve at around 16–18°C, and decant for several hours if drinking now to allow the wine to fully open and show its aromatic detail and supple texture.
