Description
Château Pavie 2005 is a standout Saint-Émilion Premier Grand Cru Classé from one of Bordeaux’s most celebrated estates, and it comes from an exceptional vintage widely regarded as one of the finest of the decade. Built on Merlot, Cabernet Franc and Cabernet Sauvignon, it combines power, finesse and remarkable depth. Tasting Notes
In the glass, Château Pavie 2005 shows a deep, nearly inky color that hints at its concentration. The nose is intense and layered, with ripe blackcurrant, black cherry and plum lifted by cedar, dark chocolate, licorice and warm spice.
On the palate, it is full-bodied and generous, with a silky texture, ripe tannins and impressive structure. The fruit is rich and dark, balanced by freshness and well-integrated oak, giving the wine both immediate appeal and the framework to evolve beautifully over time. While already expressive, it will continue to gain complexity for many years in the cellar.
Production
Château Pavie is located on the limestone and clay slopes of Saint-Émilion, where the vineyard’s privileged terroir supports deep-rooted vines and the production of wines with intensity, structure and aromatic precision. The 2005 vintage benefited from a long, warm and consistently favorable growing season, allowing the grapes to reach excellent phenolic ripeness. Fermentation and élevage were carried out with a focus on extracting concentration while preserving balance, and the wine was matured in new French oak barrels to add complexity, texture and seamless integration.
Food & Serving
This is a wine for rich, flavorful dishes such as ribeye steak, roast lamb, venison, beef tenderloin or slow-braised short ribs. It also pairs well with truffle dishes, wild mushroom risotto and aged hard cheeses. Serve at around 16–18°C, and give it ample decanting if opening now—ideally 2 to 4 hours—to allow the wine to fully open and soften.
