Tasting Notes
In the glass, Mouton Rothschild 2000 shows a deep, concentrated ruby color with the classic intensity expected from a top Pauillac. The bouquet is layered and refined, offering crème de cassis, dark berries, floral tones, cedar, coffee, earth, and a touch of chocolate, all wrapped in a noble, restrained complexity. On the palate it is full-bodied and firmly structured, with ripe Cabernet Sauvignon driving the wine’s backbone, firm tannins, and long, persistent finish. Merlot adds roundness and balance, but this remains a wine built for patience; it has excellent aging potential and can continue to develop gracefully for decades.

Production
The vineyard lies on the deep gravel soils of the Plateau de Mouton in Pauillac, where the poor, well-drained terroir is ideal for producing concentrated, ageworthy Cabernet Sauvignon. The estate’s vines are densely planted and carefully tended, with harvesting and vineyard work carried out by highly skilled teams using a combination of long-standing tradition and modern precision. Vinification at Mouton is meticulous and vintage-specific, with blending adapted each year to preserve the estate’s hallmark structure, elegance, and complexity.

Food & Serving
This is a superb match for classic, richly flavored dishes such as roast lamb, beef fillet, venison, duck breast, truffle-infused dishes, or mature hard cheeses. Serve at around 16–18°C and consider decanting for several hours if opening now, especially in its youth, to allow the wine’s aromatics and structure to fully unfold.

Château Mouton Rothschild was founded in 1853 when Baron Nathaniel de Rothschild acquired the estate in Pauillac, and it was transformed into one of the world’s most famous wine properties by Baron Philippe de Rothschild from 1922 onward. The château is celebrated not only for its exceptional wines but also for its pioneering practices, including estate bottling and the tradition of commissioning artwork for the label each vintage. Today, the estate remains a benchmark in Bordeaux and a symbol of prestige, craftsmanship, and consistency.
