Tasting Notes
In the glass, the wine is deep and dark, almost opaque, with a brooding intensity that hints at its concentration. The nose opens with layers of blackcurrant, blackberry, cedar, graphite, violets, and a subtle touch of tobacco, all unfolding with impressive complexity. On the palate, it is dense and structured, driven by a high proportion of Cabernet Sauvignon and supported by firm yet polished tannins. Dark fruit, spice, mineral notes, and fine oak nuances build into a long, elegant finish. While already showing great harmony, Château Latour 2000 has the structure and balance to evolve gracefully for decades more.

Production
The grapes come from the famed Enclos vineyard, close to the château in Pauillac, where gravel and clay soils provide ideal conditions for Cabernet Sauvignon. Harvesting is done by hand, followed by strict selection to ensure only the best fruit is used. The wine is then vinified and aged in new French oak barrels for up to 20 months, giving it both precision and depth.

Food & Serving
This is a powerful wine that pairs beautifully with dishes of equal stature, such as grilled ribeye, lamb, venison, roast beef, or truffle-infused dishes. It should be served at around 16-18°C, and decanting is recommended if the wine is enjoyed young or after extended cellaring to allow it to fully open.
