Château Henri Bonnaud Palette Rosé 2015 is a refined, terroir-driven rosé from one of Provence’s tiniest and most characterful appellations. Crafted from Grenache, Mourvèdre and Callet, it offers more depth and structure than your typical summer sipper, while retaining the breezy freshness Provence is famous for. This cuvée captures the stony, sun‑drenched hillsides of Palette and reflects a long tradition of age‑worthy rosé in this historic corner of southern France.

Tasting Notes
In the glass, the 2015 Palette Rosé shows a delicate, luminous salmon hue with copper glints that reveal a touch of evolution. The nose is complex and inviting, with notes of wild strawberries, blood orange zest and white peach alongside more Mediterranean accents of garrigue herbs, dried rose petals and a hint of spice and minerality. On the palate, this rosé is textured and layered, with a firm backbone from Mourvèdre and lively, juicy fruit from Grenache. Flavours of redcurrant, citrus, stone fruit and a faint savoury edge unfold gradually, supported by fresh acidity and a subtle saline finish that speaks to its limestone soils. Unlike simple, early‑drinking rosés, this 2015 Palette has the structure to evolve gracefully in bottle, gaining more savoury and nutty nuances over 5–7 years from vintage when well cellared.

Production
Château Henri Bonnaud lies in the heart of the Palette appellation, just outside Aix‑en‑Provence, on limestone and clay soils beneath the imposing Sainte‑Victoire mountain. This stony, well‑drained terroir, combined with the cooling Mistral winds, naturally limits yields and concentrates flavour in the grapes. The estate works with careful, often manual harvesting to pick Grenache, Mourvèdre and Callet at optimal ripeness while preserving freshness. In the cellar, the rosé is produced primarily by gentle direct pressing of whole or lightly crushed bunches, followed by cool fermentation in temperature‑controlled vessels to protect its delicate aromatics. A short period on fine lees may be used to add texture and complexity, while maintaining the clean, precise style that defines Palette rosé.

Food & Serving
This Palette Rosé 2015 is superb with Provençal cuisine: think grilled sea bass with fennel, bouillabaisse, herb‑roasted chicken, or a classic Niçoise salad. Its structure also stands up beautifully to Mediterranean tapas, charcuterie, sushi, garlic‑rubbed lamb chops, and semi‑firm cheeses like Tomme or young Comté. Serve chilled at around 10–12°C to highlight its freshness and aromatics; for older bottles, allowing it to warm slightly in the glass reveals more spice and savoury notes. Decanting is not essential, but opening the bottle 15–20 minutes before serving helps this structured rosé fully express its complexity.
