Tasting Notes
In the glass, Château Grillet 2021 presents a luminous, pale gold hue with green reflections, hinting at its youthful energy and precision. The nose is refined and layered rather than exuberant, opening slowly with notes of white peach, apricot skin, and fresh pear, followed by delicate scents of orange blossom, jasmine, crushed stone, and a subtle whisper of almond and vanilla from élevage.
On the palate, the wine is taut, dry, and elegantly structured, with a spine of saline minerality that anchors the natural richness of Viognier. Flavours of stone fruit, citrus zest, and ripe nectarine are interwoven with hints of fennel, verbena, and a chalky, almost smoky mineral note that lingers on the long, focused finish. Production
Château Grillet is a tiny, amphitheatre-shaped vineyard carved into steep, south and southeast-facing granite terraces above the Rhône, benefiting from intense sunlight, strong diurnal shifts, and well-drained, mineral-rich soils—ideal conditions for Viognier. Vines are traditionally worked by hand due to the extreme slopes, with very low yields to ensure concentration and purity of fruit. Harvest is done manually in small crates, with meticulous sorting to pick only perfectly ripe, healthy berries. In the cellar, the grapes are gently pressed, and fermentation typically takes place in a combination of oak barrels and larger vessels, often with a portion of new wood, followed by extended élevage on fine lees. This careful vinification and aging regimen aims to balance texture and finesse, preserving the wine’s freshness while building depth and complexity.
Food & Serving
Château Grillet 2021 is an outstanding partner for refined, delicately prepared dishes where subtlety and texture matter. Think butter-poached lobster, seared scallops, turbot with beurre blanc, or roasted poultry with morel cream sauce; it also pairs beautifully with dishes featuring aromatic herbs, light truffle notes, or fine Japanese cuisine such as sashimi or grilled white fish. Mature, subtly nutty cheeses like aged Comté or Beaufort can also work very well. Serve at 10–12°C (50–54°F) in a generously sized white wine glass to allow the aromas to unfold. Decanting for 30–60 minutes when young is recommended to help the wine open, especially if enjoyed within its first 3–5 years.
