Tasting Notes
In the glass, the 2019 Château Fonroque shows a deep, vibrant ruby colour with a youthful purple edge, hinting at its energy and aging potential. The nose opens gradually, revealing aromas of ripe black cherry, plum and wild blueberry, layered with notes of dried violet, graphite, sweet spice and a subtle earthiness that reflects its biodynamic origins.
On the palate, the wine is medium to full-bodied yet finely etched, with supple Merlot-driven fruit wrapped in the fresh, linear structure of Cabernet Franc. Flavours of dark berries, redcurrant and black plum are supported by polished tannins and a lively, savoury backbone, with touches of cedar, cocoa and a faint floral lift on the finish. It is not a showy, opulent style; instead, it feels composed, elegant and slightly reserved in its youth, promising increased complexity with time. Enjoyable now with proper aeration, it should evolve gracefully over the next 8–15 years, gaining in harmony and tertiary nuances.
Production
Château Fonroque’s 22 hectares of Grand Cru Classé vineyards in Saint‑Émilion rest on a classic mix of limestone and clay, a terroir known for giving Merlot and Cabernet Franc both depth and freshness. The estate has been fully organic and biodynamic for years, with permanent cover crops of grass and flowers between the rows to promote biodiversity, regulate water uptake and preserve soil moisture. Harvest is carried out by hand, followed by meticulous sorting: first on a vibrating table, then by hand, to ensure only pristine berries go to the cellar. Fermentation takes place in temperature‑controlled cement tanks, preserving purity of fruit and terroir expression. After fermentation, around 40% of the wine matures in new oak barrels, a further 40% in one‑ to three‑year‑old barrels, and the remaining 20% stays in cement to retain brightness and fruit definition. The final blend is assembled after 16–18 months of élevage, then traditionally fined with fresh egg whites and usually bottled without prior filtration to maintain texture and aromatic complexity.
Food & Serving
This Saint‑Émilion Grand Cru Classé is an excellent partner for refined yet flavourful dishes such as roast lamb with herbs, filet mignon, duck breast, veal chops, or classic French dishes like boeuf bourguignon and confit duck. It also works beautifully with truffle pasta, mushroom risotto, and aged hard cheeses such as Comté or Manchego. Serve at 16–18°C (around 60–64°F) in large Bordeaux glasses to allow the bouquet to unfold fully. Decanting for 1–2 hours in its youth will help the wine open up and soften the tannins; as it gains bottle age, a shorter, gentle decant primarily to remove sediment will suffice.
