Description
Château d’Yquem 2005 is one of the most celebrated sweet wines in the world, crafted from meticulously selected botrytised Sauvignon Blanc and Sémillon grown in Sauternes, Bordeaux. Famous for its exceptional rarity and historic prestige, it remains the only estate in the 1855 Bordeaux Classification to receive the rank of Premier Cru Supérieur.
Tasting Notes
In the glass, it typically shows a deep golden to amber hue, hinting at both richness and freshness. The bouquet is layered and seductive, with notes of apricot jam, candied citrus, honey, saffron, toasted almond, and exotic spice, all lifted by a vibrant mineral edge.
On the palate, the wine is opulent and concentrated, yet remarkably balanced by a firm line of acidity that keeps the sweetness in check. Flavours of ripe stone fruit, marmalade, pineapple, and crème brûlée unfold in a long, seamless finish. Thanks to its structure, intensity, and natural acidity, Château d’Yquem 2005 has extraordinary aging potential and can evolve beautifully for decades, even generations.
Production
Château d’Yquem is produced from the highest hill in Sauternes, where morning mists and warm afternoons create ideal conditions for noble rot, or botrytis cinerea. The estate works with extremely low yields, harvesting grapes selectively in multiple passes to ensure only fully botrytised berries are picked at perfect maturity.
The blend is dominated by Sémillon, supported by Sauvignon Blanc, and the winemaking focuses on preserving purity, concentration, and aromatic complexity through careful vinification and long aging before release.
Food & Serving
Serve Château d’Yquem slightly chilled, ideally around 10–12°C, to best showcase its freshness and aromatic complexity. A gentle decanting can be helpful for a younger vintage like 2005, but it is not essential; older bottles should be handled carefully and opened with minimal agitation.
It pairs beautifully with foie gras, blue cheese such as Roquefort, fruit-based desserts, tarte Tatin, crème brûlée, or simply served on its own as a contemplative finish to a special meal.
