The nose opens with blackcurrant, blackberry, and a hint of dark cherry, layered with cedar, tobacco, graphite, and gentle spice. The palate is poised and well-balanced, combining ripe dark fruit with fine tannins and a lively line of acidity that keeps the wine fresh and precise. Its structure suggests very good ageing potential, with the 2021 vintage likely to gain further complexity over the next 8 to 15 years, developing more earthy, savoury nuances over time.

Production
Château Cantemerle comes from the Haut-Médoc, where gravelly soils and a temperate Atlantic-influenced climate help Cabernet Sauvignon achieve ripeness while preserving freshness and definition. The vineyard’s terroir, with its well-draining earth and classic Bordeaux conditions, is ideally suited to producing structured, aromatic wines with finesse. The grapes are typically harvested parcel by parcel, allowing the team to pick each variety at optimal ripeness. Vinification follows a traditional Bordeaux approach, with careful fermentation and ageing in oak to build complexity, integrate the tannins, and preserve the wine’s elegant character.

Food & Serving
This is an excellent match for roast lamb, beef fillet, duck, game, and slow-cooked dishes with herbs or mushrooms. It also pairs beautifully with aged hard cheeses. Serve at around 16–18°C, and decant for about 1 hour if drinking young to allow the aromatics and structure to खुलly open.
