Tasting Notes
In the glass, it shines with a luminous golden color and a stream of fine, persistent bubbles. The bouquet is layered and refined, opening with fresh citrus, white flowers, and toasted nuts, followed by subtle brioche and mineral nuances. On the palate, the wine is rich yet beautifully poised, with vibrant acidity, a creamy texture, and remarkable length. Flavors of citrus, almond, and honey unfold gradually, giving the Champagne both immediacy and depth. With its cellar age and strong structure, it has the potential to develop further complexity over time.

Production
Blanc de Millénaires 2007 is drawn exclusively from Chardonnay grown in prized Côte des Blancs villages including Avize, Cramant, Oger, Le Mesnil-sur-Oger, and Vertus. The chalk-rich terroir of this area lends the wine its tension, minerality, and finesse, while the careful selection of premier fruit supports the cuvée’s precision and elegance. The wine was matured in the cellar for more than a decade, allowing it to gain richness and complexity while preserving freshness and purity.

This Champagne is a natural match for oysters, scallops, lobster, fine seafood dishes, and poultry in creamy sauces, as well as elegant vegetarian dishes with rich textures. Serve chilled at around 8-10°C for the best balance of freshness and expression, and decanting is not recommended.
